Recipe: Easy Pot Roast

Slow cooker pot roast is one of my absolute favorite meals- what’s better than coming home to dinner that’s ready to eat?! It took me (and my toddler) 6 minutes to prep and start my dad’s recipe- it’s classic, simple, and so delicious! Use a crock-pot liner for quick cleanup too!

Dad’s Easy Pot Roast

Ingredients:

  • 2-3 lb beef chuck roast
  • 1 bag of baby carrots
  • 1 bag of red potatoes
  • 1/2 sweet onion
  • 1 can of french onion soup (10.5 oz)
  • 1 can of beef consommé (10.5 oz)

Directions:

  1. Chop the potatoes, carrots, and onions into bite sized pieces (I prefer to quarter the potatoes and halve the carrots. I cut the onion in half and then into long 1/2 inch slices. Do it however you like!)
  2. Place roast in the bottom of the crock pot.
  3. Add the vegetables and then pour french onion soup and beef consommé evenly over top.
  4. Add pepper to taste (I do a pinch).
  5. Cook on high for 8 hours.

And voila! Come home to dinner made!

This pot roast is perfect for busy days and evenings- I always make a slow cooker meal on nights that we have swimming (or other evening activities). There’s nothing better than coming home to dinner that’s ready to eat!
